A Happy New Year!
(Friday I`m in Love)
I really don`t want the holidays to end because I have had the best of times with my gorgeous family, pyjama days, steam train days, footy days, tidy up days. The days we have together are never the same twice -full of fun, frolics , passion and Love and sad days and tired days too in equal measure. But whatever the weather we face the daily challenges together. The twins are old enough now to be appalled at Mum and Dad snogging in the kitchen or dancing to The Cure whilst washing up. Jemima is much more venerable and thinks it is amazing that we have been boyfriend and girlfriend for 21 years ("That`s half your life time Mummy!"she marvelled)
Good days or bad days- these days we inhabit are all we have and so I am on a mission to make everyday fabulous as we are not here for a long time but we are here for a good time!
So how do we ensure that happiness follows us every day of our lives? I think by being kind as often as we can be, by loving as much as we can do and by giving more than we take helps. Love is the answer and that`s all we need to learn this year.
I think cooking is Love in action...
Chicken liver pate
8oz chicken livers
1 tbs garlic butter
2tbs double cream
fresh thyme
1 small glass port
more garlic butter to top
Melba toast to serve
Fry the livers in the butter add the thyme and cook until just brown on the outsides and pinkish inside.Add the port and flame if you`re feeling perky add the cream and then blitz in a food processor. It looks like runny cement but put into a dish and top with more melted garlic butter and pop in the fridge until set. To make melba toasts take the crusts off 4 slices of thin white bread and toast on both sides then split in two and toast again until they curl up like Autumn leaves. Serve with the lovely pate , big glass of red wine and some raw red onions, tomatoes and toasted almonds as a little salad. YUM, eating a little bit of something gorgeous makes me happy.
